Grapes: 60% Pinot Bianco - 40% Chardonnay
Production area: estate vineyards in Nugareto, Sasso Marconi (BO)
Training system: Guyot, spacing 2.30 m between rows and 0.90 m between vines
Yield per hectare: 8 T/ha Pinot Bianco - 10 T/ha Chardonnay
Vinification: gentle pressing of the grapes and fermentation at controlled temperature
Aging: in stainless steel tanks for a minimum of 5 months
Secondary fermentation: in autoclave at a temperature of 13 – 14 °C for thirty days, after which the sparkling wine remains in contact with its lees for at least another month.
